You put so much thought into making it flavorful and perfect with charring your own peppers, just the right amount of pureed vs chunky, corn is a must, and those homemade tortilla strips (the most important part in my opinion!!)

Vegan Tortilla Soup I just cancelled Netflix and I’m making this soup today.
We also ate it with brown rice which made it even taste better. You can also use home-cooked dried black beans and fresh or frozen sweetcorn. Sprinkle all over with a pinch or two of salt and bake for 12 minutes.
If you are following a medically restrictive diet, please consult your doctor or registered dietitian before preparing this recipe for personal consumption. The only real fat is in the chopped avocado on top. It does not taste like traditional tortilla soup but I liked it very much!

I pureed the salsa before adding, though I would be willing to skip this step next time if in a pinch for time. It has made my transition to a vegan diet so very easy! That’s why I suggest making the poblano peppers and tomatoes the day before and it comes together MUCH faster That is what I do now, so there is a much faster dinner.

Just really press down and make sure your pan is hot, as an iron skillet gets super hot. Mexican food and soup! Husband and kid approved also! I will be adding avocado for garnish.

I also added a can of fire roasted tomatoes and an extra can of black beans. I added a teaspoon of adobo sauce (I can never get enough heat) and voila new favorite soup!

Add all of the ingredients to the pot (excluding the tortillas and oil), cover and slow cook on low for 5-6 hours or high for 4-6 hour. 2 tablespoons olive oil Preheat the oven to 400 degrees F and stack them and cut them into 1/2 inch strips. This looks delicious! Garnish with baked corn tortilla strips.
